Put the Lemon in the Coconut (day 48)

-Today was a great day! I had the day off to relax and get some stuff done.  I relaxed and got little stuff done, which is completely okay by me.

-I did decide to whip up some coconut lemon bars that Emily gave me the recipe for.  And I am not even exaggerating when I say that they may be the most sinful dish I've made all year.  I am going to share the recipe and give a big shout out to Emily for giving it to me.

-I had the best night ever going out with some friends.  I haven't laughed that hard in a really, really long time.  My cheeks were hurting!  I think a few beers and great company is a must at least once a month, it's true what they say about laughter.  It definitely makes you feel like a million bucks.


Emily's Coconut Lemon Bars
Bottom Layer:
Mix: 3/4 c brown sugar and 1 1/2 sticks of butter
Stir In: 1 1/2 c flour
Press & flatten with hands to cover bottom of ungreased 9 x 13" pan
Bake: 10-20 minutes at 350 degrees
Cool: until you can touch the pan

Coconut Lemon Topping:
Beat: well 3 eggs
Stir In: 2/3 c brown sugar, 2/3 c white sugar, 3 T fresh lemon juice, 1 T (heaping) flour, 1/2 tsp salt
Mix In: 1 1/2 c shredded moist cococut (lemon zest from lemon optinal)
Spread: on top of bottom layer
Return: to oven and bake for 25 minutes until top is golden brown
Cool: Slightly and dust powdered sugar over the top
Cut and Serve
